Answer:
a) It sounds to me like you overwrote your windoze partition - if it isn't in the menu, ubuntu probably isn't finding a windoze partition, and you screwed up bigtime!
b) Every Ubuntu dual-boot install I have done (and I have done a lot of them!) has given me windoze in the startup menu. Also, the windoze partition/s also appear as folders on the desktop and / or in /media as well. If they are not there, go back to a)
c) if you have a windoze partition still on the harddrive, browse it from within Ubuntu and see if the files are there, windoze folders, etc., and if everything looks ok, get a windoze install cd from someone and run fixmbr. Fixmbr will kill grub, reinstall the windoze bootloader, and if windoze is still there, it will start as always, and you can then use windoze to reformat the linux partitions - should appear as empty, unused harddisk space (I believe - I have never reformed ext2/3 with windoze, I have only gone the other way).
d) if you fixmbr and it tells you there is no OS, you are up a creek and no paddle. Reinstall grub, use Ubuntu until you find a windoze install disk, and learn from this little episode.
