It would be just fine.. it won't handle an application like Photoshop quite as well (won't run it as quickly) as a Powerbook, but you'll still get the job done. If you can get the 2.0 GHz instead of the 1.83, then do it- it will run Photoshop faster (although still slower than a Powerbook).

Ultimately, practically any new computer with sufficient memory will do- it's also about the software you choose and not just the hardware and the OS. But you definitely need enough power and reliability in your computer to keep you and your graphics applications happy for a while. I think you'll be fine with a MacBook.
You'll probably need Photoshop, Illustrator, InDesign… essentially the CS3 suite (Design Premium or one of the other suites). The MacBook ought to be able to handle these- but do try to get the fastest one available- you'll be glad you did later (think of it as an investment that will give you a good return).

Mac has always been a staple with designers all these years. With the power of Mac OS X (compared to other OSes), you can be sure that you can work better and higher productivity since it is geared towards designing workflow.
One thing that need to consider of macbook is its integrated graphics chip (Intel-based) and its 13.3" screen (accurate colors may been compromised).
To be honest, MacBook Pro is recommended for serious design work but by then, budget will be another concern.
If portability is not really the main priority, you may consider the iMac instead. Value-for-money and packed with performance, definitely a top choice.
